Buckeyes are a favorite treat in my house because they taste exactly like those popular peanut butter cups we all love. They are incredibly simple to make since there is no actual baking required. You just mix, roll, and dip your way to a perfect dessert.

My biggest tip for getting that smooth chocolate finish is to keep your peanut butter balls chilled before dipping. If they get too soft while you are working, just pop them back in the freezer for a few minutes so they hold their shape perfectly.

Ingredients

  • 1 and 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 and 3/4 cups powdered sugar
  • 6 ounces semi sweet chocolate chips
  • 2 tablespoons vegetable shortening

Instructions

    In a large bowl, beat the peanut butter, softened butter, and vanilla extract together until the mixture is smooth and creamy.

    Gradually add the powdered sugar while mixing on low speed until the dough is well combined and reaches a stiff consistency.

    Roll the dough into one inch balls and place them on a parchment lined baking sheet.

    Insert a toothpick into the top of each ball and place the tray in the freezer for about 30 minutes to firm up.

    Melt the chocolate chips and shortening together in a microwave safe bowl using short intervals until smooth.

    Dip each chilled peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible at the top to look like a buckeye nut.

    Place the dipped candies back onto the baking sheet and remove the toothpick, using your finger to smooth over the hole if you like.

    Refrigerate the finished candies until the chocolate is fully set before serving.

Store your buckeyes in an airtight container in the refrigerator to keep the chocolate snappy. These also freeze beautifully for up to three months if you want to make them ahead of time for a party.
