There is something special about the combination of rich dark chocolate and cool peppermint. These brownies have become a favorite in my house because they balance that deep cocoa flavor with a refreshing mint layer that keeps everyone reaching for seconds.

You can easily make these ahead of time if you have guests coming over. I find that chilling them properly makes the layers distinct and much easier to slice into clean, beautiful squares.

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups white sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 1/4 cup softened butter
  • 2 tablespoons heavy cream
  • 1 teaspoon peppermint extract
  • 1 cup semi sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a 9x13 inch baking pan.

    In a large bowl, whisk together the melted butter and sugar until smooth, then beat in the eggs and vanilla.

    Fold in the flour, cocoa powder, and salt until the batter is just combined.

    Spread the batter into your prepared pan and bake for 25 minutes or until a toothpick comes out mostly clean.

    Let the brownies cool completely before adding the next layer.

    To make the mint layer, beat the powdered sugar, softened butter, heavy cream, and peppermint extract together until creamy, then spread it evenly over the cooled brownies.

    Chill the brownies in the fridge for about 30 minutes to set the mint layer.

    Melt the chocolate chips and coconut oil together in the microwave in short bursts until smooth, then spread over the mint layer.
