Ingredients

  • 12 ounces peeled and deveined shrimp
  • 3 large eggs, lightly beaten
  • 3 tablespoons vegetable oil, divided
  • 2/3 cup finely chopped shallots
  • 4 cups cooked jasmine rice, chilled
  • 2 tablespoons soy sauce
  • 4 teaspoons fish sauce
  • 1.5 teaspoons curry powder
  • 2 teaspoons sugar
  • 1/4 teaspoon ground white pepper
  • 1 cup diced fresh pineapple
  • 1/2 cup roasted salted cashews (optional)
  • 4 scallions, thinly sliced
  • Salt to taste

Instructions

    Lightly season the shrimp with a pinch of salt.

    Heat 1.5 tablespoons of oil in a large nonstick skillet over medium heat. Add the shrimp and cook for 1 to 2 minutes per side until just opaque. Remove the shrimp to a plate.

    Add the beaten eggs to the same skillet. Scramble them until just cooked through, then move them to the plate with the shrimp.

    Add the remaining 1.5 tablespoons of oil to the skillet. Cook the shallots for about 1 minute until they are soft and fragrant.
