If you love the combination of chewy caramel and crunchy peanuts coated in creamy white chocolate, you are going to adore these. They are surprisingly simple to put together at home and make a wonderful gift for friends or neighbors during the holidays.

My best tip for success is to let the caramel clusters firm up in the fridge before you dunk them into the melted chocolate. This helps everything hold its shape and makes the dipping process much less messy for you.

Ingredients

  • 1 cup honey roasted peanuts
  • 1 cup soft caramel bits
  • 2 tablespoons heavy cream
  • 12 ounces good quality white chocolate chips
  • 1 tablespoon vegetable shortening

Instructions

    Line a baking sheet with parchment paper to prevent sticking.

    In a small saucepan over low heat, combine the caramel bits and the heavy cream. Stir constantly until the mixture is completely smooth and melted.

    Remove the pan from the heat and stir in the honey roasted peanuts until they are evenly coated in the caramel.

    Use a spoon to drop small mounds of the peanut and caramel mixture onto your prepared baking sheet. Place the tray in the freezer for about 15 minutes to firm up.

    Melt the white chocolate and the vegetable shortening together in a microwave safe bowl. Heat in 30 second intervals, stirring in between, until the chocolate is smooth.

    Dip each chilled caramel cluster into the melted white chocolate, shake off any excess, and place them back on the parchment paper.

    Let the chocolate set completely at room temperature before serving.

Store your finished treats in an airtight container in the refrigerator to keep the chocolate snappy. These will stay fresh for up to two weeks, though they usually disappear much faster than that.
