There is something so special about homemade pudding pops. They are incredibly creamy and satisfy that craving for a cold treat without much effort at all. I love keeping a batch in the freezer so I can grab one whenever I need a little pick me up after dinner.

The trick to getting that perfect texture is using evaporated milk. It provides a rich base that freezes much smoother than regular milk. Feel free to swap the chocolate pudding for vanilla or butterscotch, and do not be afraid to add extra mix ins like cookie crumbs or coconut.

Ingredients

  • 1 box (3.9 ounces) instant pudding mix, chocolate or vanilla
  • 1 can (12 ounces) evaporated milk
  • 1 cup thawed whipped topping

Instructions

    In a large bowl, combine the instant pudding mix and the evaporated milk.

    Beat the mixture with a hand mixer or a sturdy whisk for about one to two minutes until it starts to thicken.

    Gently stir in the thawed whipped topping until well combined.

    Transfer the pudding mixture into a large zip top bag and snip off one of the bottom corners.

    Pipe the pudding into your popsicle molds, tapping them against the counter to remove any air bubbles.

    Insert the popsicle sticks and place the molds in the freezer for at least six hours until they are completely firm.

    When you are ready to serve, run the outside of the mold under lukewarm water for a few seconds to help them release easily.

To store your pops for later, remove them from the molds and freeze them on a parchment lined tray for two hours. Once they are firm, transfer them to a freezer bag where they will stay fresh for up to three months. Use metal or hard plastic molds for the best results, as silicone molds can sometimes be too flexible.
