There is something truly special about turning a loaf of buttery brioche into a warm, cozy dessert. This raspberry bread pudding is a favorite in my house because it feels fancy enough for guests but is actually quite simple to pull together on a weekend morning or after a long day.

I find that using day old bread helps the slices hold their shape perfectly while soaking up all that delicious custard. Just make sure you do not skip the chilling time because that allows the bread to get perfectly soft and creamy before it hits the oven.

Ingredients

  • 1 loaf brioche bread, cubed
  • 2 cups fresh raspberries
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

    Grease a standard baking dish with a little butter or cooking spray.

    Arrange the brioche cubes in the dish and scatter the fresh raspberries evenly throughout the bread.
