There is nothing quite like the experience of scooping into a bowl of smooth, rich chocolate ice cream on a warm afternoon. I used to rely on store bought brands, but making it from scratch means you get the best flavor and a texture that is truly perfect.

My biggest tip for this recipe is to make sure your custard base is completely chilled before it goes into the ice cream maker. It makes the final result so much creamier and prevents those pesky ice crystals from forming.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

    Whisk the cocoa powder and half of the sugar together in a medium bowl.

    In a saucepan, heat the milk, cream, and the remaining sugar over medium heat until it is steaming but not boiling.

    Slowly pour about half of the hot milk mixture into your egg yolks while whisking constantly to temper them.

    Pour the egg mixture back into the saucepan with the rest of the cream and add the cocoa mixture.
