There is something so special about making your own candy bars at home. The combination of the crisp, sandy shortbread cookie base, the chewy caramel layer, and the snappy chocolate coating is hard to beat. Everyone in my family asks for these whenever we have a gathering.

My top tip for this recipe is to make sure your caramel has completely set before you try to dip the bars in chocolate. If you are in a rush, just pop the tray in the freezer for fifteen minutes to speed up the process.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 14 ounces soft caramel candies, unwrapped
  • 2 tablespoons heavy cream
  • 12 ounces milk or semi sweet chocolate chips

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a 9 by 9 inch baking pan with parchment paper.

  2. 2

Cream the butter and sugar together until light and fluffy. Slowly add the flour and salt until a soft dough forms.

  3. 3

Press the dough evenly into the bottom of your prepared pan and bake for 20 to 25 minutes until the edges are golden.

  4. 4

Let the shortbread cool completely in the pan.

  5. 5

Melt the caramels and heavy cream together in a saucepan over low heat, stirring constantly until smooth.

  6. 6

Pour the melted caramel over the cooled shortbread base and spread it into an even layer.

  7. 7

Refrigerate the pan for about an hour until the caramel is firm.

  8. 8

Lift the chilled block out of the pan using the parchment paper and cut it into rectangular bars.

  9. 9

Melt the chocolate chips in the microwave in short bursts. Dip each bar into the chocolate, let the excess drip off, and place on wax paper to set.

๐Ÿ’ก Tips

Store these bars in an airtight container in the refrigerator to keep the caramel firm. You can also freeze them for up to three months if you want to keep them on hand for quick cravings.
