There is nothing quite like firing up the grill for some classic chicken quarters. The combination of succulent meat and that delicious crispy skin makes this a favorite for backyard gatherings and simple weeknight dinners.

I love using a honey Dijon marinade because it caramelizes beautifully over the flames. For the best results, try to let the chicken sit in the marinade for at least an hour so the flavors can really soak into the meat.

Ingredients

  • 4 chicken leg quarters
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    In a small bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, oregano, salt, and pepper.
