Individual Cherry Clafoutis

I love making these in individual ramekins because everyone gets their own little treat. If you cannot find fresh cherries, frozen ones work just as well as long as you let them thaw first.
Ingredients
- 2 cups fresh cherries, pitted
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all purpose flour
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon butter, for greasing
- Powdered sugar, for dusting
Instructions

Preheat your oven to 375 degrees Fahrenheit.

Generously grease four or six ramekins with butter.

Divide the pitted cherries evenly among the bottom of your prepared ramekins.

In a mixing bowl, whisk the eggs and sugar together until smooth.

Add the flour, milk, and vanilla extract to the bowl and whisk until the batter is well combined and free of lumps.

Pour the batter over the cherries in each ramekin.

Place the ramekins on a baking sheet and bake for 25 to 30 minutes, or until they are puffed and golden brown on top.

Let them cool for a few minutes before dusting the tops with powdered sugar.

These are best served warm, but you can also store leftovers in the fridge for up to two days. If you serve them chilled, just let them sit on the counter for a bit to take the edge off the cold. A dollop of whipped cream makes a wonderful addition.
