This meal is a favorite in my house because it comes together so quickly on busy weeknights. The combination of smoky sausage, chicken, and tomatoes creates a savory flavor that tastes like it simmered on the stove for hours.

My top tip for this recipe is to make sure you rinse your rice well before adding it to the pot. This helps remove extra starch so the rice stays nice and fluffy instead of getting sticky or clumpy.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long grain white rice
  • 1 can (14.5 ounces) fire roasted diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Turn your Instant Pot to the saute setting and heat the olive oil.

    Add the sliced sausage and cook until it starts to brown, then add the chicken pieces and cook until they are no longer pink on the outside.

    Stir in the diced onion and garlic, cooking for about 2 minutes until fragrant.

    Pour in the chicken broth and use a wooden spoon to scrape any brown bits off the bottom of the pot to prevent a burn error.

    Add the rice, fire roasted tomatoes with their juices, oregano, salt, and pepper.
