I rely on this recipe constantly when I am meal prepping for the week. It is a total lifesaver because I can cook a big batch of chicken in the Instant Pot while I focus on getting other things done in the kitchen. The seasoning blend I use gives the meat a savory and delicious flavor that works perfectly in everything from tacos and salads to hearty soups.

You will love how juicy the chicken stays thanks to the pressure cooker. If you are in a rush and forgot to take your meat out of the freezer, you can use frozen breasts as well. Just remember to add a little extra time to the cooking cycle to make sure it reaches a safe internal temperature.

Ingredients

  • 2 to 4 chicken breasts, boneless and skinless
  • 1 tablespoon canola oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1 cup water or chicken broth

Instructions

  1. 1

Mix the salt, pepper, garlic powder, onion powder, oregano, basil, parsley, and paprika in a small bowl.

  2. 2

Pat the chicken breasts dry with paper towels, then coat them thoroughly in the seasoning mixture.

  3. 3

Turn your Instant Pot to the Sautรฉ setting and heat the oil. Brown the chicken breasts for 3 to 4 minutes on each side until they look golden.

  4. 4

Remove the chicken and set it aside for a moment.

  5. 5

Pour the water or broth into the pot and scrape the bottom with a wooden spoon to loosen any browned bits.

  6. 6

Place the trivet inside the pot and arrange the chicken on top.

  7. 7

Lock the lid and cook on high pressure for 5 minutes for average sized breasts, or 8 minutes for thicker pieces.

  8. 8

Let the pressure release naturally for 5 minutes before opening the valve.

  9. 9

Remove the chicken and let it rest for 5 minutes before slicing or serving.

๐Ÿ’ก Tips

Store leftover chicken in an airtight container in the fridge for up to three days. You can shred the cold chicken for sandwiches or slice it to toss into a quick pasta salad for an easy lunch the next day.
