Juicy Instant Pot Pork Loin
This tender pork loin is seasoned with savory spices and cooks perfectly in your Instant Pot for an easy dinner.

I love serving this with creamy mashed potatoes to soak up all the pan juices. You can even whisk those leftover juices into a quick gravy while the meat rests to make the meal feel extra special.
Ingredients
- 2 to 3 pound pork loin roast
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup chicken or vegetable broth
Instructions

In a small bowl, mix the brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper to create your spice rub.

Pat the pork loin dry with paper towels and rub the spice mixture all over the surface of the meat.

Turn your Instant Pot to the saute function and add the olive oil. Once hot, sear the pork on all sides until it is nicely browned.

Remove the pork and pour in the broth. Use a wooden spoon to scrape any browned bits off the bottom of the pot.

Place the pork back into the pot and secure the lid. Set the valve to sealing and cook on high pressure for 20 minutes.

Allow the pressure to release naturally for 10 minutes before opening the valve to release any remaining steam.

Remove the pork to a cutting board, let it rest for 5 minutes, and then slice it into thick pieces.

Store any leftovers in an airtight container in the fridge for up to three days. You can thicken the cooking liquid with a little cornstarch slurry on the stove to make a quick gravy.
