This lemon buttermilk sorbet is one of my favorite ways to end a warm summer dinner. It uses just a few simple ingredients to create something that tastes much more special than the individual parts suggest.

The buttermilk gives it a lovely creamy texture that you do not usually find in sorbet. Whether you have an ice cream maker or prefer to make it by hand, this recipe is easy to whip up and store in the freezer for whenever you need a cooling treat.

Ingredients

  • 1 cup sugar
  • 2 cups low fat buttermilk
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon corn syrup
  • 1 pinch salt

Instructions

    Whisk the sugar, buttermilk, lemon juice, corn syrup, and salt in a large bowl until well combined.

    Continue to whisk occasionally for a few minutes until all the sugar has dissolved completely, then chill the mixture in the refrigerator for about an hour until it is very cold.

    Pour the cold mixture into your ice cream maker and process according to the manufacturer instructions until it reaches a soft serve consistency.

    Transfer the sorbet to a freezer safe container, smooth the top, and freeze for at least 3 hours until firm enough to scoop.

    If you do not have a machine, pour the chilled mixture into a shallow dish and freeze for 1 to 2 hours, then stir well and continue freezing for another 2 to 3 hours until firm.

Try chilling your serving bowls in the freezer for about 10 minutes before scooping, which helps prevent the sorbet from melting too quickly. This treat keeps best in an airtight container in your freezer for up to one week.
