There is nothing quite like a good skewer for an easy weeknight dinner. I love using Greek yogurt as a marinade because the natural enzymes help tenderize the meat, making sure it stays perfectly moist on the grill every single time.

This recipe is a favorite in my house because it relies on fresh, simple ingredients like lemon, garlic, and dried oregano. You can easily cook these outside on the grill or inside using a heavy grill pan if the weather is not cooperating.

Ingredients

  • 1.5 pounds boneless skinless chicken breasts, cut into 1 inch cubes
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers
  • Fresh lemon wedges and parsley for serving

Instructions

    In a medium bowl, whisk together the Greek yogurt, olive oil, minced garlic, lemon juice, oregano, salt, and pepper.

    If using wooden skewers, soak them in water for 20 minutes before using to prevent burning.
