If you love the rich flavors of creamy garlic chicken, you are going to adore this pasta salad. It takes all those classic ingredients like sun dried tomatoes and parmesan cheese and tosses them with tender pasta for a meal that feels special but is easy enough for a busy weeknight.

My biggest tip for this salad is to let it sit in the fridge for at least thirty minutes before serving. This allows the creamy sauce to soak into the pasta, making every single bite extra flavorful and delicious.

Ingredients

  • 1 pound rotini or penne pasta
  • 2 cups cooked chicken breast, shredded or cubed
  • 1/2 cup sun dried tomatoes in oil, chopped
  • 1/4 cup fresh basil, thinly sliced
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. 1

Cook the pasta in a large pot of salted boiling water according to the package directions until al dente.

  2. 2

Drain the pasta and rinse it under cold water to stop the cooking process, then set it aside in a large bowl.

  3. 3

In a separate medium bowl, whisk together the mayonnaise, Greek yogurt, minced garlic, oregano, red pepper flakes, and parmesan cheese to make the dressing.

  4. 4

Add the cooked chicken, chopped sun dried tomatoes, and fresh basil to the bowl with the cooled pasta.

  5. 5

Pour the creamy dressing over the pasta mixture and toss everything together until well combined.

  6. 6

Season with salt and pepper to your liking, then cover and refrigerate for at least thirty minutes before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the refrigerator for up to three days. If the pasta seems a little dry after sitting, just stir in a splash of milk or a spoonful of mayonnaise to bring the creaminess back to life.
