There is something special about the combination of smoky corn and creamy dressing. This salad is one of my favorite ways to use leftover chicken while keeping things exciting and full of flavor.

I love serving this on a busy weeknight because it comes together so quickly. If you want a bit more texture, try adding some crushed tortilla chips right before you serve it.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups corn kernels, fresh or canned and drained
  • 1 ripe avocado, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

    In a small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, and minced garlic to make the dressing.

    If you like your corn slightly charred, heat a skillet over medium high heat and cook the corn kernels for about 5 minutes until they have some golden brown spots.

    In a large mixing bowl, combine the shredded chicken, cooked corn, and diced avocado.

    Pour the dressing over the chicken mixture and toss gently until everything is well coated.

    Fold in the cilantro and most of the crumbled cotija cheese.

    Season with salt and pepper to your liking and top with the remaining cheese before serving.

This salad tastes best when served chilled or at room temperature. Store any leftovers in an airtight container in the fridge for up to two days, but add the avocado fresh if you can. It works beautifully as a filling for tacos or served over a bed of crunchy romaine lettuce.
