This zucchini bread is a wonderful way to use up fresh summer squash. It is naturally sweetened with honey and stays incredibly soft thanks to the addition of creamy Greek yogurt.

You do not even need an electric mixer to put this together. Simply stir the wet and dry ingredients in separate bowls, combine them, and bake until golden brown.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup Greek yogurt
  • 1/3 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, squeezed dry

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.
