There is something so comforting about the smell of pumpkin and spice baking in the oven. These bars are incredibly moist and soft, making them the perfect dessert for autumn gatherings or just a cozy weekend at home.

Most people love these because they stay tender for days. My biggest tip is to make sure your cream cheese is completely softened before you start the frosting so you get a perfectly smooth finish.

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 15 ounces canned pumpkin puree
  • 8 ounces softened cream cheese
  • 1/2 cup softened butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a 10 by 15 inch jelly roll pan.

  2. 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. 3

In a separate large bowl, beat the oil, sugar, eggs, and pumpkin puree until well combined.

  4. 4

Gradually add the dry ingredients to the pumpkin mixture and stir until just combined.

  5. 5

Spread the batter evenly into your prepared pan and bake for 25 to 30 minutes until a toothpick comes out clean.

  6. 6

Let the bars cool completely before frosting.

  7. 7

To make the frosting, beat the cream cheese and butter together until smooth. Gradually mix in the powdered sugar and vanilla until creamy.

  8. 8

Spread the frosting over the cooled bars and cut into squares to serve.

๐Ÿ’ก Tips

Store these bars in the refrigerator since they contain cream cheese. They taste wonderful chilled, but you can also let them sit on the counter for ten minutes before serving if you prefer a softer frosting.
