There is nothing quite like homemade ice cream during the summer, especially when you do not need a fancy machine to make it. This recipe is a favorite in our house because it is so smooth and captures those perfect fresh peach flavors without any fuss.

I love how the spiced Biscoff cookies add a little crunch that balances the creamy filling perfectly. Make sure your peaches are ripe and sweet for the best possible results.

Ingredients

  • 2 cups heavy cream, cold
  • 14 ounces sweetened condensed milk
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, diced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup Biscoff cookies, crushed

Instructions

  1. 1

Combine the diced peaches, sugar, and lemon juice in a small saucepan over medium heat.

  2. 2

Cook the peach mixture for about 8 to 10 minutes until soft and thickened, then let it cool completely in the fridge.

  3. 3

In a large bowl, beat the softened cream cheese, sweetened condensed milk, and vanilla extract until the mixture is smooth and creamy.

  4. 4

In a separate bowl, whip the cold heavy cream until stiff peaks form.

  5. 5

Gently fold the whipped cream into the cream cheese mixture until combined.

  6. 6

Pour half of the ice cream base into a loaf pan, then dollop half of the peach mixture and half of the cookie crumbs on top.

  7. 7

Repeat with the remaining ice cream base, peaches, and cookies, using a knife to swirl everything together gently.

  8. 8

Cover and freeze for at least 6 hours or until firm before serving.

๐Ÿ’ก Tips

Store the ice cream in the freezer covered tightly with plastic wrap to prevent ice crystals from forming. If you prefer a stronger spice flavor, you can add a pinch of cinnamon to your cookie crumbs before layering them in.
