One Pot Coconut Curry Chicken and Rice
This creamy and aromatic one pot meal is a cozy dinner that comes together in just thirty minutes.
dailyrecipesbook.comThere is nothing quite like a warm bowl of coconut curry to brighten up a busy weeknight. This recipe is a favorite in my house because the rice cooks right along with the chicken, which means you have very little cleanup at the end of the night.
My best tip is to use full fat coconut milk if you want the sauce to be extra creamy and rich. If you prefer a lighter version, the low fat kind works just fine, though the texture will be a little thinner.
Ingredients
- 1 pound chicken breast, cut into bite sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 cup white basmati rice, rinsed
- 1 can (14 ounces) coconut milk
- 1 cup chicken broth
- 1 cup frozen peas
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
- 1
Heat the olive oil in a large pot or deep skillet over medium heat.
- 2
Add the chicken pieces and cook until they are browned on all sides, then remove them from the pot and set them aside.
- 3
Add the diced onion to the same pot and cook for a few minutes until it is soft.
- 4
Stir in the garlic and curry powder, cooking for about one minute until it smells fragrant.
- 5
Add the rice, coconut milk, and chicken broth to the pot, stirring well to scrape up any browned bits from the bottom.
- 6
Return the chicken to the pot, bring the liquid to a gentle boil, then turn the heat to low.
- 7
Cover the pot with a tight lid and let it simmer for about 15 to 18 minutes, or until the rice is tender and the liquid is absorbed.
- 8
Stir in the frozen peas during the last minute of cooking, then remove from heat and serve warm with a sprinkle of fresh cilantro.
๐ก Tips
This dish stores well in the fridge for up to three days in an airtight container. You can reheat it in the microwave with a tiny splash of water to keep the rice moist. Serve it with a squeeze of lime juice for a bright pop of flavor.
