There is nothing quite like a warm bowl of coconut curry to brighten up a busy weeknight. This recipe is a favorite in my house because the rice cooks right along with the chicken, which means you have very little cleanup at the end of the night.

My best tip is to use full fat coconut milk if you want the sauce to be extra creamy and rich. If you prefer a lighter version, the low fat kind works just fine, though the texture will be a little thinner.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 cup white basmati rice, rinsed
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

    Heat the olive oil in a large pot or deep skillet over medium heat.

    Add the chicken pieces and cook until they are browned on all sides, then remove them from the pot and set them aside.
