If you love taco night and pasta night equally, this recipe is for you. It brings together seasoned ground beef and tender spaghetti in one pan, which means you get all the delicious taste without a big pile of dishes to clean up afterward.

I love making this on busy weeknights when I want something hearty but simple. My best tip is to keep an eye on the water level while the pasta simmers, because it helps create that thick and savory sauce that coats the noodles perfectly.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 onion, diced
  • 2 cups beef broth
  • 1 can diced tomatoes, 14 ounces
  • 8 ounces spaghetti, broken in half
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, fresh cilantro, diced jalapeños

Instructions

  1. 1

Place a large pot or deep skillet over medium heat and brown the ground beef with the diced onion until the beef is fully cooked through.

  2. 2

Drain any excess grease from the pan.

  3. 3

Stir in the taco seasoning, beef broth, and the can of diced tomatoes including the liquid.

  4. 4

Add the broken spaghetti pieces into the pot and stir everything to combine.

  5. 5

Bring the mixture to a boil, then turn the heat down to low.

  6. 6

Cover the pot and simmer for about 10 to 12 minutes, or until the pasta is tender and most of the liquid has been absorbed.

  7. 7

Sprinkle the shredded cheese over the top and cover the pot for one minute to let the cheese melt.

  8. 8

Serve warm with your favorite taco toppings.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can refresh the leftovers with a splash of water when reheating on the stove. This dish tastes great served with a side of crunchy tortilla chips.
