There is nothing quite like a simple dinner that finishes all at once on a single pan. I love this recipe because the chicken thighs get perfectly golden while the potatoes soak up all the flavorful juices as they roast.

My best tip for this recipe is to make sure your potato chunks are roughly the same size so they all finish cooking at the same time. You will love how easy the cleanup is when the whole meal is made on one tray.

Ingredients

  • 4 bone in, skin on chicken thighs
  • 1 pound baby potatoes, halved
  • 1/2 pound fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 4 tablespoons melted butter
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the chicken thighs, halved potatoes, and green beans onto a large rimmed baking sheet.

  3. 3

Drizzle the olive oil over the ingredients and season everything generously with salt, pepper, and the Italian seasoning. Toss lightly to coat.

  4. 4

Arrange the chicken skin side up and roast in the oven for 30 minutes.

  5. 5

While the chicken roasts, mix the melted butter, minced garlic, and parmesan cheese in a small bowl.

  6. 6

Remove the pan from the oven and spoon the garlic butter mixture evenly over the chicken and vegetables.

  7. 7

Return the pan to the oven for another 10 to 15 minutes, or until the chicken is cooked through and the potatoes are tender.

  8. 8

Garnish with fresh parsley before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. This dish is great for meal prep because the flavors taste even better the next day after they have had time to settle.
