Peach Blackberry Buckle
This rustic summer treat features juicy fruit and a tender, buttery cake that buckles as it bakes.
dailyrecipesbook.comIf you are new to the world of buckles, you are in for a treat. This classic dessert belongs to the same family as crisps and cobblers, and it gets its name because the cake batter rises around the fruit as it bakes, causing the top to crinkle and buckle. It is the perfect way to highlight fresh summer fruit from the farm stand.
What I really love about this recipe is how simple it is to put together. You melt your butter directly in your baking dish, pour the batter over the top, and scatter your sugared fruit right on top without stirring anything. As it cooks, the peaches and berries sink into the cake to create beautiful, jammy pockets. It is wonderful served warm with a big scoop of vanilla ice cream.
Ingredients
- 2 ripe peaches, sliced 1/2 inch thick
- 1 1/3 cups fresh blackberries
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, cut into 8 pieces
- 1 1/4 cups all purpose flour
- 2/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 1/2 teaspoon vanilla extract
- Vanilla ice cream for serving, optional
Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit.
- 2
In a medium bowl, toss the peaches, blackberries, and brown sugar together. Set this mixture aside so the fruit can start releasing its juices.
- 3
Place the butter into a 10 inch cast iron skillet or a 9 inch square baking pan. Put the pan in the oven for about 5 minutes until the butter is completely melted, then carefully remove it.
- 4
In another medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- 5
In a small bowl, whisk the milk, egg, and vanilla extract. Add this liquid mixture to your dry ingredients and whisk until the batter is smooth.
- 6
Pour the batter over the melted butter in your pan, but do not stir them together. Distribute the fruit and all those flavorful juices evenly over the top of the batter.
- 7
Bake for 50 to 60 minutes until the top is golden brown and the fruit has created lovely pockets throughout. Let it cool for 10 minutes before serving warm.
๐ก Tips
Serve this buckle warm directly from the pan for the best texture. If you have leftovers, keep them in the refrigerator for up to 3 days or freeze them for longer storage.
