There is something so special about the combination of rich chocolate and cool peppermint. These bars feature a chewy brownie base topped with a layer of creamy ice cream and crushed cookies, making them a favorite for parties or cozy nights at home.

For the best results, make sure your brownie layer is completely cooled before you add the ice cream. If the brownies are even a little bit warm, they will melt the ice cream and mess up your beautiful layers.

Ingredients

  • 1 box brownie mix plus required eggs and oil
  • 1.5 quarts peppermint ice cream
  • 1 cup hot fudge sauce
  • 15 Oreo cookies, crushed
  • 1/2 cup mini chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  1. 1

Preheat your oven and bake the brownies in a 9 by 13 inch pan according to the package instructions.

  2. 2

Let the brownies cool completely on a wire rack until they are firm.

  3. 3

Remove the ice cream from the freezer and let it sit on the counter for about 10 minutes so it is easy to spread.

  4. 4

Spread the softened ice cream evenly over the cooled brownie layer using a spatula.

  5. 5

Drizzle the hot fudge sauce over the ice cream and sprinkle with the crushed Oreo cookies, mini chocolate chips, and crushed peppermint candies.

  6. 6

Cover the pan and freeze for at least 4 hours until the ice cream is set.

  7. 7

Slice into squares with a warm knife and serve immediately.

๐Ÿ’ก Tips

Store these bars in an airtight container in the freezer for up to one week. To make slicing easier, run your knife under hot water and wipe it dry between each cut.
