There is something so special about the way a grill transforms simple potatoes into a smoky and delicious side dish. You get those beautiful charred grill marks and a wonderful texture that makes them hard to resist.

My favorite thing about this method is that you do not need to boil the potatoes first or mess around with a grill basket. Just slice them up, season them well, and let the grill do all the heavy lifting for you.

Ingredients

  • 2 large russet potatoes, sliced into 1/2 inch thick rounds
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

    Preheat your outdoor grill to medium high heat.

    In a large bowl, toss the potato slices with the olive oil until they are evenly coated.

    Sprinkle the garlic powder, onion powder, smoked paprika, salt, and black pepper over the potatoes and toss again to coat.

    Place the potato slices directly onto the clean grill grates.

    Close the lid and cook for about 6 to 8 minutes per side.

    Check that the potatoes are tender in the center and have nice grill marks before removing them from the heat.

These potatoes are best served right off the grill while the skins are nice and crispy. If you have leftovers, keep them in an airtight container in the fridge and reheat them in a pan or oven to bring back the crunch.
