Quinoa is a wonderful pantry staple that works well as a base for salads, grain bowls, or just as a healthy side dish for dinner. Many people find it intimidating at first, but once you learn the right ratio, it becomes incredibly easy to make.

My top tip is to rinse your quinoa thoroughly before cooking. This removes the natural coating called saponin, which can sometimes make the grains taste a little bit bitter or soapy.

Ingredients

  • 1 cup white quinoa
  • 2 cups water or vegetable broth
  • 1/4 teaspoon salt

Instructions

    Place the quinoa in a fine mesh strainer and rinse it well under cold running water for about 30 seconds.

    Combine the rinsed quinoa, water or broth, and salt in a medium saucepan.

    Bring the liquid to a boil over medium high heat.

    Once boiling, reduce the heat to low, cover the pot with a tight fitting lid, and let it simmer for 15 minutes.

    Remove the pan from the heat and let it sit covered for 5 minutes so the steam finishes cooking the grains.

    Remove the lid, fluff the quinoa with a fork, and serve warm.

Store leftover quinoa in an airtight container in the fridge for up to five days. You can also freeze cooked quinoa for up to three months. It tastes great tossed with fresh herbs, lemon juice, and chopped vegetables for a quick lunch.
