Smoked beef tenderloin is one of my favorite things to make when I want a meal that feels special but is actually quite easy to manage. It turns out incredibly tender every time, and that rich smoky flavor really highlights the quality of the beef.

Since this cut is lean, the trick is to keep an eye on your internal temperature so you do not overcook it. I like to keep my seasoning simple so the natural taste of the meat shines through.

Ingredients

  • 1 whole beef tenderloin, about 3 to 4 pounds
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly cracked black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

    Remove the beef tenderloin from the refrigerator and let it sit at room temperature for about 30 minutes.

    Pat the meat dry with paper towels to ensure a nice crust.

    Rub the entire surface of the beef with olive oil.

    In a small bowl, mix the salt, pepper, garlic powder, and onion powder, then coat the beef evenly with the mixture.

    Preheat your smoker to 225 degrees Fahrenheit using your favorite wood chips like oak or hickory.

    Place the beef in the smoker along with the fresh rosemary and thyme sprigs.

    Smoke the beef until the internal temperature reaches 125 degrees Fahrenheit for medium rare, which usually takes about 60 to 90 minutes depending on the thickness.

    Remove the beef from the smoker and let it rest on a cutting board, covered loosely with foil, for at least 15 minutes before slicing.
