Peruvian chicken is a classic dish that is famous for its bold, savory marinade and perfectly charred skin. It has become a favorite in homes everywhere because the combination of spices creates such a deep and delicious flavor that everyone loves.

I like to use boneless thighs for a quick weeknight meal, but you can easily roast a whole chicken if you prefer. Just remember to let the meat marinate for at least a few hours so the lime and spices really soak in.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh cilantro
  • 1/2 cup mayonnaise
  • 1 jalapeño, seeded and chopped
  • 1 tablespoon lime juice for the sauce

Instructions

    In a large bowl, whisk together the lime juice, olive oil, minced garlic, paprika, cumin, oregano, salt, and pepper.

    Add the chicken thighs to the bowl and toss until well coated, then cover and refrigerate for at least two hours.

    Preheat your grill to medium high heat and lightly oil the grates.

    Place the chicken on the grill and cook for about 6 to 8 minutes per side until the meat is cooked through and has nice charred marks.

    While the chicken grills, make the Aji Verde sauce by blending the cilantro, mayonnaise, jalapeño, and extra lime juice until smooth.

    Serve the grilled chicken warm with the green sauce drizzled over the top or on the side for dipping.

💡 Tips

Store any leftover sauce in an airtight container in the fridge for up to three days. This chicken is wonderful served alongside roasted potatoes or a fresh side salad. If you want more heat, leave the seeds in your jalapeño when making the sauce.
