Pistachio Cookie Ice Cream Sandwiches

Ingredients

- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg plus 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup shelled pistachios, chopped
- 1 pint pistachio gelato or ice cream

Melt the butter in a small saucepan over medium heat, stirring until it turns golden brown and smells nutty. Pour it into a large bowl and let it cool for about 10 minutes.

Whisk the brown sugar and granulated sugar into the browned butter until smooth. Add the egg, egg yolk, and vanilla extract, then mix well.

Stir in the flour, baking soda, and salt until just combined. Fold in most of the chopped pistachios.

Scoop tablespoon sized balls of dough onto a parchment lined baking sheet. Bake at 350 degrees for 10 to 12 minutes until the edges are golden. Let them cool completely on the pan.

Once cooled, place a generous scoop of softened gelato onto the bottom of one cookie. Press another cookie on top to form a sandwich. Repeat with the remaining cookies.

Roll the edges of each sandwich in the reserved chopped pistachios. Wrap individually in plastic wrap and freeze for at least an hour before serving.
