This ginger soy chicken has become a staple in my house for busy weeknights when I want something hot and fresh. It comes together in just a few minutes and everyone at the table seems to love the sweet and savory sauce.

My best tip for this recipe is to prep all your ingredients before you turn on the stove. Stir frying happens very quickly, so having your sauce mixed and chicken chopped makes the process much smoother.

Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite sized pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. 1

Whisk the soy sauce, honey, rice vinegar, and sesame oil together in a small bowl and set it aside.

  2. 2

Heat the vegetable oil in a large skillet or wok over medium high heat.

  3. 3

Add the chicken pieces to the pan and cook until they are browned and cooked through, which usually takes about 6 to 8 minutes.

  4. 4

Stir in the minced garlic and grated ginger and cook for about 30 seconds until fragrant.

  5. 5

Pour the sauce mixture into the pan and let it bubble for 2 minutes so it thickens and coats the chicken nicely.

  6. 6

Remove from heat and garnish with the sliced green onions and sesame seeds before serving.

๐Ÿ’ก Tips

Serve this over a warm bowl of steamed white or brown rice to soak up the extra sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them gently in a pan.
