There is something so satisfying about putting together a hearty dinner bowl after a long day. I love these because they are completely customizable, meaning you can use whatever you already have sitting in your fridge or pantry.

My favorite trick is to prep a big batch of grains on Sunday so you can assemble these in just a few minutes during the week. Just pick a protein, a base, and a favorite sauce to make it your own.

Ingredients

  • 2 cups cooked brown rice or quinoa
  • 1 pound protein of choice, such as grilled chicken, tofu, or chickpeas
  • 2 cups fresh vegetables like spinach, cucumber, or shredded carrots
  • 1 sliced avocado
  • 1/4 cup favorite dressing like tahini, soy sauce, or vinaigrette
  • 1 tablespoon sesame seeds or chopped nuts for crunch

Instructions

  1. 1

Prepare your grain base according to the package instructions and divide it into four serving bowls.

  2. 2

Cook your protein of choice in a pan or oven until it is fully cooked through and seasoned well.

  3. 3

Arrange the cooked protein and your fresh chopped vegetables on top of the grain base.

  4. 4

Add a few slices of avocado to each bowl for creaminess.

  5. 5

Drizzle your favorite dressing over the top and sprinkle with seeds or nuts before serving.

๐Ÿ’ก Tips

Store the dressing separately from the bowls if you are meal prepping so the veggies stay crisp. You can keep these in airtight containers in the fridge for up to three days.
