When I am craving something savory and spicy after a long day, these chili garlic noodles are my go to recipe. They are incredibly fast to whip up and use ingredients you probably already have tucked away in your pantry.

I love how flexible this dish is. If you enjoy a lot of heat, you can easily add more chili, or keep it mild if you prefer a gentler spice level. It is a fantastic base for adding leftover chicken or tofu if you want to make it a bit heartier.

Ingredients

  • 8 ounces dried noodles like ramen, spaghetti, or udon
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 1 green onion, thinly sliced
  • 1 teaspoon toasted sesame seeds

Instructions

    Cook the noodles according to the package directions, then drain them well and set aside.

    In a small bowl, whisk together the soy sauce, chili garlic sauce, sesame oil, and sugar until well combined.

    Heat the vegetable oil in a large skillet or wok over medium heat.

    Add the minced garlic to the pan and cook for about thirty seconds until it becomes fragrant, but be careful not to let it brown or burn.
