There is nothing quite like a cold Pina Colada on a warm afternoon. This drink is a favorite because it tastes just like a vacation in a glass. It is sweet, fruity, and perfectly icy thanks to the blended pineapple.

My top tip for this recipe is to use frozen pineapple chunks instead of ice cubes. Using frozen fruit keeps the drink thick and flavorful without watering it down as it melts.

Ingredients

  • 2 cups frozen pineapple chunks
  • 1/2 cup cream of coconut
  • 1/2 cup pineapple juice
  • 1 tablespoon lime juice
  • 1 cup ice cubes
  • Fresh pineapple wedges for garnish
  • Maraschino cherries for garnish

Instructions

  1. 1

Place the frozen pineapple chunks, cream of coconut, pineapple juice, and lime juice into your blender.

  2. 2

Add the ice cubes to the blender container.

  3. 3

Blend everything on high speed until the mixture is smooth and creamy.

  4. 4

Pour the drink into tall glasses.

  5. 5

Garnish each glass with a fresh pineapple wedge and a cherry before serving immediately.

πŸ’‘ Tips

Serve this drink in chilled glasses to keep it cold for longer. If you have leftovers, pour them into popsicle molds and freeze them for a fun tropical treat later. You can also add a splash of white rum if you prefer a classic cocktail version.
