Lemon Tiramisu is a beautiful change of pace from the traditional coffee version. It brings together creamy mascarpone and fresh citrus to create a treat that feels light and sunshine filled.

Everyone loves this dessert because it is no bake and easy to assemble ahead of time. My best tip is to use fresh lemon juice rather than bottled juice for the cleanest, most vibrant flavor in your cream.

Ingredients

  • 16 ounces mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 package ladyfinger cookies
  • 1/2 cup water
  • 1/4 cup sugar for the soaking syrup

Instructions

    Combine the water, the quarter cup of sugar, and two tablespoons of the lemon juice in a shallow bowl to create your soaking syrup.

    In a large mixing bowl, beat the heavy cream and the half cup of sugar until you have stiff peaks.

    Gently fold the mascarpone, the rest of the lemon juice, and the lemon zest into the whipped cream until the mixture is smooth and combined.

    Quickly dip each ladyfinger into the lemon syrup for just a second so they are moistened but not soggy.

    Arrange a layer of dipped ladyfingers in the bottom of an eight inch square baking dish.
