There is nothing quite like the combination of fresh mint and zesty lime to cool you down on a hot summer day. I love making this virgin mojito because it is so simple to prepare and uses garden fresh ingredients that taste much better than any store bought soda. It is my favorite drink to reach for when I want something bubbly and light without the alcohol.

Since this drink comes together in just five minutes, it is perfect for when friends drop by unexpectedly. You can easily muddle the mint and lime ahead of time in a large pitcher if you are serving a group, just remember to wait until the very last second to add the sparkling water so the fizz stays nice and strong.

Ingredients

  • 10 fresh mint leaves
  • 1 ounce fresh lime juice
  • 1 teaspoon sugar or simple syrup
  • 4 ounces sparkling water or club soda
  • Ice cubes
  • Lime slices and extra mint sprigs for garnish

Instructions

    Place the fresh mint leaves, lime juice, and sugar into the bottom of a sturdy glass.

    Use a muddler or the back of a wooden spoon to gently crush the mint leaves against the lime juice and sugar, which releases the flavorful oils from the mint.

    Fill the glass to the top with ice cubes.

    Pour the sparkling water over the ice and stir gently to combine everything.

    Add a garnish of lime slices and a fresh sprig of mint before serving immediately.
