There is something so special about the combination of chewy marshmallow cereal bars and cold, creamy ice cream. This is the ultimate comfort dessert that brings back childhood memories while being a hit at any summer party.

My top tip is to make sure your Rice Krispies bars are completely cool before you add the ice cream. If they are even a little bit warm, the ice cream will melt way too fast and make a sticky mess.

Ingredients

  • 4 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 6 cups crispy rice cereal
  • 1 quart vanilla ice cream, slightly softened

    Melt the butter in a large pot over low heat.

    Add the marshmallows and stir constantly until they are fully melted and smooth.

    Remove the pot from the heat and fold in the crispy rice cereal until it is evenly coated with the marshmallow mixture.

    Press the mixture into a parchment lined 9x13 inch baking pan and let it cool completely.

    Once cooled, use a knife to cut the treats into equal rectangles.

    Place a scoop of softened ice cream on half of the rectangles, then top with the remaining pieces to create sandwiches.

💡 Tips

You can store these in the freezer for up to one week if you wrap them tightly in plastic. For a fun twist, roll the edges of the finished sandwiches in colorful sprinkles or mini chocolate chips before freezing.
