There is nothing quite like a slice of chocolate cheesecake when you need a little something special. This recipe is a favorite in my house because it hits that perfect balance of a crunchy base and a rich, velvety filling that just melts in your mouth.

My top tip for success is to make sure your cream cheese and eggs are at room temperature before you start mixing. It helps the batter come together without any lumps, which gives you that professional, smooth texture we all want in a perfect cheesecake.

Ingredients

  • 20 Oreo cookies, finely crushed
  • 4 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces semi sweet chocolate, melted and cooled
  • 1/2 cup heavy cream
  • 1/2 cup chocolate chips

Instructions

  1. 1

Preheat your oven to 325 degrees Fahrenheit and grease a 9 inch springform pan.

  2. 2

Mix the crushed cookies and melted butter in a bowl until the texture resembles wet sand.

  3. 3

Press the cookie mixture firmly into the bottom of your pan and bake for 10 minutes, then set aside to cool.

  4. 4

Beat the softened cream cheese and sugar in a large bowl until smooth and creamy.

  5. 5

Mix in the vanilla extract and the cooled melted chocolate until fully combined.

  6. 6

Add the eggs one at a time, beating on low speed after each addition just until incorporated.

  7. 7

Pour the filling over your prepared crust and smooth the top with a spatula.

  8. 8

Bake for 55 to 60 minutes until the edges are set but the center still jiggles slightly.

  9. 9

Turn off the oven and leave the cheesecake inside with the door cracked for one hour to cool slowly.

  10. 10

Heat the heavy cream until simmering, pour it over the chocolate chips, and stir until smooth to create the ganache.

  11. 11

Spread the ganache over the chilled cheesecake and refrigerate for at least 4 hours before serving.

๐Ÿ’ก Tips

Store any leftovers in the refrigerator for up to 5 days. For the cleanest slices, run your knife under hot water and wipe it dry between each cut.
