This bowl is one of my favorite ways to pull together a nutritious dinner using simple pantry staples. The combination of roasted sweet potatoes and juicy chicken creates a hearty base that keeps everyone coming back for seconds.

I love adding apples and almonds because they bring a crunch that makes every bite interesting. It is a fantastic option for meal prep, as it tastes just as good the next day for lunch.

Ingredients

  • 2 large chicken breasts, cut into bite sized pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup white or brown rice, cooked
  • 1 crisp apple, diced
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the cubed sweet potatoes on a baking sheet, drizzle with one tablespoon of olive oil, and season with salt and pepper.

    Roast the sweet potatoes for about 20 minutes until they are tender and starting to brown.

    While the potatoes roast, heat the remaining oil in a large skillet over medium heat.

    Add the chicken pieces to the skillet and season with thyme, salt, and pepper. Cook until the chicken is golden brown and cooked through.
