Savory Ground Pork and Bulgur Stuffed Peppers

Ingredients
- 6 large bell peppers, any color
- 1 pound ground pork
- 1 cup cooked bulgur
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce, divided
- 1 tablespoon olive oil
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions

Preheat your oven to 375 degrees F and lightly grease a large baking dish.

Cut the tops off the bell peppers and remove the seeds and membranes from the inside.

Heat the olive oil in a large skillet over medium heat and cook the onion until it is soft.

Add the ground pork to the skillet and cook it until it is browned, making sure to break it into small crumbles as it cooks.

Stir in the garlic, cooked bulgur, half of the tomato sauce, parsley, oregano, salt, and pepper.

Spoon the pork mixture into each bell pepper until they are full and stand them up in the prepared baking dish.

Pour the remaining tomato sauce over the tops of the peppers.

Cover the dish with foil and bake for 35 minutes.

Remove the foil, sprinkle the cheese over the peppers, and bake for another 10 minutes until the cheese is melted and bubbly.

Store any leftovers in an airtight container in the refrigerator for up to three days. You can also freeze these peppers after baking, just make sure to let them cool completely before wrapping them tightly to keep them fresh.
