Sheet Pan Chicken with Sweet Potatoes and Green Beans
This easy sheet pan meal features tender chicken, caramelized sweet potatoes, and fresh green beans all finished with a golden honey mustard glaze.
dailyrecipesbook.comThere is nothing quite like a simple dinner that comes together on a single tray. This meal has become a staple in my house because it balances healthy vegetables with protein, and it saves me so much time on cleanup duty.
The honey mustard sauce is the secret to everything here. It caramelizes in the oven to give the chicken and veggies a sweet and savory finish that even the picky eaters will enjoy. Just make sure to cut your potatoes into small, uniform cubes so they cook through at the same time as the chicken.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite sized pieces
- 2 medium sweet potatoes, peeled and diced into 1 inch cubes
- 1 pound fresh green beans, trimmed
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Place the diced sweet potatoes and chicken pieces on a large sheet pan. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss everything together until well coated.
- 3
Spread the chicken and potatoes in an even layer. Roast in the oven for 15 minutes.
- 4
While the pan is in the oven, whisk together the honey, Dijon mustard, and apple cider vinegar in a small bowl.
- 5
Remove the pan from the oven and add the green beans. Drizzle the honey mustard sauce over everything and toss gently to coat.
- 6
Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through and the vegetables are tender.
- 7
Serve warm directly from the pan.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this in the microwave or a warm oven, but it tastes best served fresh with a little extra cracked black pepper on top.
