This meal is one of my favorite ways to get dinner on the table during a busy week. Everything cooks on a single pan, which means you have very little cleanup to deal with once you are finished eating.

The combination of smoky sausage and caramelized sweet potatoes is just wonderful. If you like a little extra kick, do not skip the jalapeño or the final drizzle of hot honey.

Ingredients

  • 12 ounces smoked sausage, sliced into rounds
  • 2 medium sweet potatoes, peeled and cubed
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 1 jalapeño, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup crumbled feta cheese
  • 1/2 avocado, sliced for serving

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the sliced sausage, sweet potatoes, bell pepper, onion, and jalapeño onto a large sheet pan.

    Drizzle the olive oil over the top and sprinkle with the smoked paprika, salt, and pepper. Toss everything well until it is evenly coated.

    Spread the mixture out in a single layer and roast for 25 to 30 minutes, or until the potatoes are tender and the sausage is browned.

    In a small bowl, mix the honey with the red pepper flakes.

    Remove the pan from the oven, drizzle the hot honey over everything, and top with the feta cheese and fresh avocado slices before serving.

💡 Tips

Leftovers keep well in the fridge for up to three days in an airtight container. You can reheat this in the oven or a skillet to keep the veggies crisp. Feel free to swap the feta for goat cheese if you prefer a creamier tang.
