If you have some fresh tomatoes on your counter, this pasta is a wonderful way to use them. It is a light and simple meal that really lets the fresh flavors shine through without much effort.

I love making this on busy weeknights because it only takes about thirty minutes from start to finish. A quick tip is to keep your pasta in the hot water until the very last second, which helps keep the noodles from sticking together while you toss them.

Ingredients

  • 10 ounces angel hair pasta
  • 1.5 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1.5 cups diced tomatoes
  • 1/4 cup fresh chopped basil
  • 2 teaspoons minced garlic
  • 1 tablespoon balsamic vinegar
  • Balsamic glaze for garnish
  • Grated Parmesan cheese for garnish

Instructions

    Lightly pound the chicken breasts until they are about one inch thick so they cook evenly. Season both sides with salt, pepper, and the Italian seasoning.

    Heat the olive oil in a large skillet over medium high heat. Cook the chicken for about 7 to 8 minutes, turning it halfway through, until the center is no longer pink and reaches 165 degrees. Move the chicken to a plate to rest.

    Boil the angel hair pasta in a large pot of water according to the package directions. Keep the pasta in the warm water until you are ready to mix everything together.

    In a medium bowl, stir together the diced tomatoes, chopped basil, minced garlic, and balsamic vinegar. Season the mixture with a little extra salt and pepper if you like.

    Add the tomato and basil mixture to the skillet you used for the chicken. Cook it over medium heat for just 1 or 2 minutes until it is warmed through.

    Turn off the heat and add the hot pasta to the skillet. Toss the noodles until they are well coated in the tomato mixture, adding another drizzle of olive oil if the pasta seems a bit dry.
