There is nothing quite like a good taco night to bring the whole family together. This marinade uses pantry staples and fresh citrus to make sure your chicken stays tender and packed with flavor every time you cook it.

My best tip is to let the chicken sit in the fridge for at least thirty minutes. If you have extra time, letting it marinate for a few hours really lets those spices soak into the meat for the best result.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds boneless skinless chicken breasts or thighs

Instructions

  1. 1

Whisk the olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, salt, and pepper together in a small bowl.

  2. 2

Place your chicken in a large glass bowl or a sealable plastic bag.

  3. 3

Pour the marinade over the chicken, making sure every piece is well coated.

  4. 4

Cover or seal the container and place it in the refrigerator for at least thirty minutes or up to four hours.

  5. 5

Remove the chicken from the marinade and grill, pan sear, or bake until the internal temperature reaches 165 degrees Fahrenheit.

๐Ÿ’ก Tips

Serve these tacos with warm tortillas, fresh cilantro, and a squeeze of lime. If you have leftover chicken, store it in an airtight container in the fridge for up to three days.
