Pastina soup is a classic meal that many of us grew up eating. It is the perfect remedy for a rainy day or when you just need something light and nourishing to settle your stomach.

The best part about this recipe is how quickly it comes together in just one pot. I like to add a handful of finely chopped carrots to give it a little sweetness and color.

Ingredients

  • 4 cups chicken or vegetable broth
  • 1/2 cup pastina pasta
  • 1 small carrot, finely diced
  • 1 tablespoon olive oil
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

    Bring the broth to a gentle boil in a medium pot over medium heat.

    Add the finely diced carrots to the broth and cook for about 5 minutes until they start to soften.

    Stir in the pastina pasta and cook according to the package directions, usually about 6 to 8 minutes, until the pasta is tender.

    Remove the pot from the heat and stir in the olive oil and grated parmesan cheese.

    Season with salt and pepper to taste, then ladle into bowls and top with a little fresh parsley before serving.

Serve this soup immediately while the pasta is still firm. If you have leftovers, the pasta will soak up the broth, so just add a splash of extra hot water or broth when you reheat it. Keep it extra cozy by adding a pinch of red pepper flakes if you like a little heat.
