There is something so comforting about a home cooked meal that comes together on a single pan. This roasted chicken dish is a favorite in my kitchen because it uses fresh herbs and simple pantry staples to create a really satisfying dinner.

My biggest tip for this one is to cut your vegetables into similar sizes so they all finish cooking at the same time. It ensures every bite is perfectly tender and delicious.

Ingredients

  • 2 large chicken breasts, cut into bite sized pieces
  • 1 pound baby potatoes, halved
  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

In a large bowl, toss the chicken pieces, potatoes, and broccoli with the olive oil, minced garlic, oregano, thyme, salt, and pepper.

  3. 3

Spread everything out in a single layer on a large rimmed baking sheet.

  4. 4

Roast in the oven for 20 to 25 minutes until the chicken is cooked through and the potatoes are tender.

  5. 5

Garnish with fresh parsley before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. This meal pairs beautifully with a simple side salad or a dollop of Greek yogurt for a creamy touch.
