There is something so comforting about a fluffy bowl of rice, especially when it is packed with fresh lemon and herbs. This Greek rice is a staple in my kitchen because it is so easy to pull together, yet it tastes like something you would order at your favorite neighborhood restaurant.

I love serving this alongside grilled chicken or a nice piece of fish. If you want to make it extra special, feel free to toss in a handful of crumbled feta cheese or some toasted pine nuts right before you bring it to the table.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

    Heat the butter and olive oil in a medium saucepan over medium heat.

    Add the diced onion and cook for about 5 minutes until it is soft and translucent.

    Stir in the minced garlic and rice, cooking for another 2 minutes until the rice is lightly toasted and fragrant.

    Pour in the broth, lemon zest, and a pinch of salt and pepper. Bring the mixture to a boil.

    Reduce the heat to low, cover the pan with a tight lid, and let it simmer for 15 to 20 minutes until the liquid is absorbed.

    Remove the pan from the heat and let it sit covered for 5 minutes.

    Fluff the rice with a fork, stir in the fresh lemon juice and parsley, and serve warm.

Store any leftovers in an airtight container in the fridge for up to three days. You can refresh the flavors by adding a small squeeze of fresh lemon juice when you reheat it in the microwave. This rice also makes a great base for a quick Mediterranean grain bowl.
