It is perfect for a quick weeknight dinner when you want something light and healthy. If you have extra fresh limes on hand, squeeze a bit of the juice over the fish right before you serve it to add an extra pop of flavor.

Ingredients

  • 2 fresh Mahi Mahi fillets
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • Lemon wedges for serving
