When you want to make chicken taste great without much effort, a good marinade is your best friend. These two recipes are simple, reliable, and work perfectly for busy weeknight dinners.

The first one is a quick three ingredient mix for juicy grilled chicken, while the second one is a classic blend for flavorful fajitas. Just remember to let the chicken sit long enough to soak up all those good flavors.

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 1/4 cup vegetable oil
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 pound chicken breasts or thighs

Instructions

  1. 1

To make the simple grilled marinade, whisk together the olive oil, soy sauce, and lemon juice in a medium bowl.

  2. 2

To make the fajita marinade, combine the vegetable oil, lime juice, chili powder, cumin, and garlic powder in a separate bowl.

  3. 3

Place your chicken in a large resealable bag or a glass dish and pour your chosen marinade over it.

  4. 4

Seal the bag or cover the dish and let it sit in the refrigerator for at least thirty minutes or up to four hours.

  5. 5

Cook your chicken on the grill or in a hot skillet until it is golden brown and cooked through.

๐Ÿ’ก Tips

Store any extra marinade in the fridge for up to three days, but make sure to use it on fresh chicken only. You can serve the grilled chicken sliced over a big fresh salad or tuck the fajita chicken into warm flour tortillas with sautรฉed peppers.
