Foil packets are a favorite in my house because they make weeknight dinners or camping trips so simple. You just chop everything up, toss it in some seasoning, and let the grill do all the work while you relax outside.

My top tip for these is to make sure your vegetables are cut into roughly the same size pieces. This helps everything cook at the same pace so you do not end up with some mushy veggies and some that are still crunchy.

Ingredients

  • 1 pound chicken breast cut into bite size pieces
  • 2 cups baby potatoes halved
  • 1 cup broccoli florets
  • 1 sliced bell pepper
  • 3 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

    Preheat your grill to medium high heat.

    In a large bowl, mix the chicken, potatoes, broccoli, and bell pepper with olive oil, garlic, herbs, salt, and pepper.

    Tear off four large sheets of heavy duty aluminum foil.

    Divide the chicken and vegetable mixture evenly among the foil sheets.

    Fold the edges of the foil up to create a sealed packet, making sure there is a little room for steam to circulate inside.

    Place the packets on the grill and cook for about 20 minutes, or until the chicken is cooked through and the potatoes are tender.

    Carefully open the packets to let the steam escape before serving.

You can easily swap the chicken for shrimp or even tofu if you prefer. Store any leftovers in the fridge for up to three days, but these are best eaten right off the grill while they are nice and hot.
